It is true that not a lot of music is transcribed to Bb or Eb these days so here is a simple way to get what you want. You simply transpose the key. For example: The original piano music was written in F and is readily available today. If you simply change the key signature, in this case from F (1b) to G(1#) or up one tone, you can then simply write the music as written including any accidentals (# b or natural) as you see them. The same notes can be written on the line or space directly above the note you are copying.
You have selected a particularly difficult piece as the notes cover a huge rang and there are a lot of very wide intervals to cover. It may be easier for you if you are a beginner to the again transpose the piece to another key, probably a lower one. If you do that use the method described above. e.g. you are now in G and want to play in Eb. Change the key sig to 3b and write the notes down from one space to the next space, etc. Remember if you were to do this the piano and any other concert instruments you were working with will also change key to a tone below you.
